butter
castor sugar
coconut
eggs
EOSS Natural Yoghurt
lemon zest
EOSS Frozen Strawberries
EOSS Vanilla Bean Yoghurt

Set oven to 180c.
Place melted butter, caster sugar, coconut, eggs, yoghurt and lemon zest in a mixing bowl.
Whisk well.
Fold in flour and frozen strawberries.
Place mixture into a prepared loaf tin (22x8cm).
Bake for 1 hour, or until skewer comes out clean.
Allow to cool in tin for 10 minutes before transferring to a wire rack.
Dust with icing sugar.
Serve with a generous scoop of EOSS Vanilla Bean Yoghurt.
