Strawberry Yoghurt Cake


1/2 cup Eoss Natural or Classic Yoghurt
250g Eoss Frozen Strawberries (roughly chopped)
1/2 cup caster sugar
1/2 cup desiccated coconut
150g melted butter
2 eggs
Zest of 1 lemon
1 & 1/2 cup self-raising flour
Icing sugar for dusting

Set oven to 180c
Place melted butter, caster sugar, coconut, eggs, yoghurt and lemon zest in a mixing bowl
Whisk well
Fold in flour and frozen strawberries
Place mixture into a prepared loaf tin (22x8cm)
Bake for 1 hour, or until skewer comes out clean
Allow to cool in tin for 10 minutes before transferring to a wire rack
Dust with icing sugar
Serve with a generous scoop of Eoss Vanilla Bean Yoghurt
