Cinnamon Apple & Yoghurt Cake

3/4 cup Eoss Classic Yoghurt
1/2 cup Rio Vista Olive Oil
1 1/2 cup self-raising flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup caster sugar
1 cup apple (chopped and peeled)
3 eggs
1 teaspoon vanilla extract

In a large bowl add flour, baking powder, baking soda & sugar.
Mix & add apples & stir briefly.
In a large jug, whisk eggs, oil, vanilla & Eoss Classic Yoghurt.
Add wet ingredients & gently mix with a wooden spoon until combined.
Spoon batter into prepared pan.

Cinnamon Topping

1/4 caster sugar
1 teaspoon cinnamon
1 tablespoon butter (melted)

Combine cinnamon, sugar & butter.
Mix together until lumpy & wet.
Sprinkle over cake batter.
Bake cake for 40 to 50 minutes.
Cool Completely.


1/4 cup icing
1 tablespoon butter (melted)
1-2 tablespoon lemon juice

Mix icing sugar & butter, then add lemon juice.
Add more lemon juice if mixture is too thick.
Drizzle over cake and enjoy!
