Lime & Yoghurt Cake
Ingredients
Cake:
2 eggs
3 limes zest
1/3 cup lime juice
3/4 cup Rio Vista Olive Oil
1 cup Eoss Natural Yoghurt
1 & 1/4 cup sugar
2 cups self raising flour
Syrup:
Juice of 3 limes
1/2 cup of sugar
Method
Set oven at 160c.
Line & grease a 23cm cake tin.
Place eggs, lime juice, lime zest & olive oil in a mixing bowl.
Mix well, add Eoss yoghurt & continue mixing.
Add the flour & sugar & mix well.
Pour mixture into cake tin.
Bake in oven for 55-60 mins.
2 cups self raising flour
Syrup:
Place lime juice & sugar in a saucepan
Stir over medium heat until sugar is dissolved
Bring to a boil and simmer for 10 minutes
Pour hot syrup over the cake, while cake is still hot
Let cool in tin
Serve with a side of Eoss Vanilla Bean Yoghurt
