Cake
Set oven at 160c.
Line & grease a 23cm cake tin.
Place eggs, lime juice, lime zest & olive oil in a mixing bowl.
Mix well, add Eoss yoghurt & continue mixing.
Add the flour & sugar & mix well.
Pour mixture into cake tin.
Bake in oven for 55-60 mins.
2 cups self raising flour.
Syrup
Place lime juice & sugar in a saucepan.
Stir over medium heat until sugar is dissolved.
Bring to a boil and simmer for 10 minutes.
Pour hot syrup over the cake, while cake is still hot.
Let cool in tin.
Serve with a side of EOSS Vanilla Bean Yoghurt.
